Preheat oven to 375ºF.Grease two 8” cake pans.Sift flour, baking powder and salt; set aside.Melt chocolate slowly in microwave.In separate bowl, cream butter and sugar then beat in chocolate and mashed potatoes.Gradually beat in eggs along with a little flour with each addition.Fold in rest of flour.Stir in milk.Divide in 2 pans.Bake 20-25 minutes.
ICING:
4 oz dark chocolate
2 oz confectioners sugar
3 tsp Irish cream liquor
½ c heavy cream
Melt chocolate slowly in microwave.Stir in cream, sugar and Irish cream.Mix well.Use the filling between cake layers and on top and sides.Icing will set as it cools.
